Boost Your Mental Health With This Superfood Salad!

So you enjoy life in color, but do you enjoy eating pretty, colorful food too? I find that spending time creating beautiful and nutrient rich meals everyday really stimulates my brain, in turn helping to boost my mental health. Cooking allows you to detach from the outside world, and we all know how chaotic the times we're living in currently are. It's vital to our emotional well being, that we take the time to unplug. Food is art, so let's make it gorgeous!





This salad is one of the best i've ever made! However, I can't take all of the credit. My boyfriend helped too, and I have to say it wouldn't have been nearly as delicious without his input. Disclaimer: I don't usually do measurements only ingredients, and I am sorry if this is inconveniences you at all. No two creations of mine are the exact same. I'm all about progression, so I believe in trying something once and striving to make it better the next time! I may use less of the items that weren't necessarily my favorite, and over compensate with more of what I did enjoy! This recipe will leave you feeling amazing, focused, and ready to take on any daily task.


All you'll need is,

  • Spinach and kale base

  • Steamed red cabbage, broccoli, and corn

  • Diced beets

  • Clover and alfalfa sprouts

  • Tomatoes

  • Avocados

  • Red onion

  • Iodized Salt

  • Fresh cracked peppercorn

  • Extra virgin olive oil

  • Red wine vinegar

  • Lemon juice


Everything organic of course! This detail may not be particularly as important to you, but being that I have an autoimmune disease, pesticides/herbicides or any preservatives/additives in food can be a trigger for my illness. Even if you are completely healthy you should try and stick to the rule, "If I can't read or don't understand the words listed on this ingredient label, then my body won't understand either." Practicing this in your day-to-day life will help you stay healthy!


If you decide to give it a try, maybe add some type of seeds. They can be chia, sunflower, pumpkin, etc.! That was the only thing it was missing in my opinion. Other than that I give it a 10/10! Stay tuned for more yummy healthy recipes like this one. I hope you enjoy this amazing salad!
